Breakfast Egg Bake
My mom is a wizard when it comes to all things cooking and baking. I would have to say most of what I learned in the kitchen came from watching her make our meals as kids! This is her special recipe that she can basically make in her sleep and feeds the family for days.
Ingredients:
1/2 onion chopped
1/2 bunch green onion chopped
1 lb breakfast sausage
1 loaf day old French bread
1 cup sour cream
4 oz mushrooms sliced (optional)
1/2 bell pepper chopped (optional)
11-12 eggs
3 cups shredded cheese
2 cups milk
2 cups frozen tater tots or equivalent
1 tsp ground mustard
1/2 tsp red pepper flakes
1/2 tsp paprika
Directions:
Place sour cream, eggs, milk, green onion and spices into a large mixing bowl. Set aside. Sauté onions. Once translucent, add the veggies and sausage, breaking up the meat as it cooks. Once cooked through add to egg mixture along with the bread and tots. Fold until thoroughly distributed. Pour into a 9x13 greased pan. Top with shredded cheese. Bake at 350 degrees for 45 min or until cooked through.
